Balsamic Mustard Chicken



I had some chicken breasts in the fridge and needed to make a quick dinner using ingredients that I had in my kitchen. Enter Balsamic Mustard Chicken. A friend sent this recipe to me a few weeks back (it's from Everyday Paleo) and raved about how good it was. And I have to agree. Its easy, uses ingredients most will already have in their kitchen, and my kids liked it. Which says a lot. I paired it with veggies roasted with lemon, rosemary and garlic and some sweet potato rounds that I sprinkled with cumin, salt and pepper. Yum!

Paleo Pumpkin Pancakes w/Pumpkin Whip


The pumpkin patch down the street just opened and the proximity of so many pumpkins had me craving a pumpkin based treat. Voila...Pumpkin Pancakes! I followed this delicious pumpkin pancake recipe from Practical Paleo for the pancakes. For the pumpkin whip I grabbed a can of coconut milk from my fridge and mixed a couple spoonfuls of the cream at the top of the can with a couple of spoonfuls of the remaining pumpkin purée. Then I added 1/2 tsp vanilla, 1/4 tsp pumpkin pie spice and 2 tsp puréed dates. The kids LOVED them and I know they will be a repeatedly requested breakfast around here this Fall. Yum!

Pork Carnitas Salad



I followed this Pork Carnitas recipe from "Our Kitchen Escapades" blog to make Pork Carnitas Salad. Both my husband and kids liked it so it's going on the regular rotation for nights we have to be out late and I won't have time to spend a long time in the kitchen getting dinner ready. You can make the carnitas ahead of time and then just warm them up real quick prior to serving. Yum!

Fried Eggs with Baby Tomato, Avocado and Balsamic Salad



Breakfast today was quick and simple. It was my first attempt at making fried eggs and I think I had the heat up too high. But all-in-all I was pretty happy with the results. The tomatoes, avocado and balsamic vinegar is what made the meal for me though. Yum!
